A blend of 85% Pinot noir and 15% Gamay aged for 12 months in a combination of demi-muids and barrique.
An intense and fruitful wine with aromas of wild strawberries and cherries accompanied by floral and woody subtilty.
Soft tannins and a full-blown mix of red berries and implied English liquorice from the Gamay.

Cyrille Sevin

Cyrille Sevin is a former math teacher from Paris, who is now dedicated to the art of wine making in the beautiful area of Cheverny, in the eastern Touraine.
Cyrille has been making organic wine since 2006, and from 2008 he started to use biodynamic practices in the vineyards, but without certification – something that is not important to him.

All work in the vineyards is done by hand and the selection during harvest is very meticulous. The harvest often happens very late, because the right ripeness of the grapes is alfa-omega to Cyrille.
All fermentations occur with indigenous yeasts and take place in cooler cellars, to secure long fermentations. He never adds sulfur, and the wines are of course bottled without fining or filtration.
Cyrille makes super precise, pure and clean wines, with great concentrations. He is a craftsman like few!
