A genuine taste bomb with complexity and finesse. Cyrille does all of the harvesting by hand, and in Une Lente Mélopée he has made an intriguing blend of Sauvignon Blanc, Chardonnay and Menu Pineau (70/20/10). The juice ferments for 13 months in old demi-muids, which gives it a complexity that contains both the freshness and immediate fruit from the grapes and an almost warm, spiced backbone from the long fermentation.

Cyrille Sevin

Cyrille Sevin is a former math teacher from Paris, who is now dedicated to the art of wine making in the beautiful area of Cheverny, in the eastern Touraine.
Cyrille has been making organic wine since 2006, and from 2008 he started to use biodynamic practices in the vineyards, but without certification – something that is not important to him.

All work in the vineyards is done by hand and the selection during harvest is very meticulous. The harvest often happens very late, because the right ripeness of the grapes is alfa-omega to Cyrille.
All fermentations occur with indigenous yeasts and take place in cooler cellars, to secure long fermentations. He never adds sulfur, and the wines are of course bottled without fining or filtration.
Cyrille makes super precise, pure and clean wines, with great concentrations. He is a craftsman like few!
