Cour-Cheverny is a unique appellation within Cheverny in Loire. The only grape used for Cour-Cheverny wines is Romorantin, an old Burgundy variety, now only grown in this area. Handpicked from old vines and fermented 12 months in old demi-muids. Subtle nose with Acacia flowers, pears, and beeswax. Taste of herbs and a hint of acidic minerality. Lively with length and elegance.

Cyrille Sevin

Cyrille Sevin is a former math teacher from Paris, who is now dedicated to the art of wine making in the beautiful area of Cheverny, in the eastern Touraine.
Cyrille has been making organic wine since 2006, and from 2008 he started to use biodynamic practices in the vineyards, but without certification – something that is not important to him.

All work in the vineyards is done by hand and the selection during harvest is very meticulous. The harvest often happens very late, because the right ripeness of the grapes is alfa-omega to Cyrille.
All fermentations occur with indigenous yeasts and take place in cooler cellars, to secure long fermentations. He never adds sulfur, and the wines are of course bottled without fining or filtration.
Cyrille makes super precise, pure and clean wines, with great concentrations. He is a craftsman like few!
