L’improbable is made from 100 % Cabernet Franc. It ferments one year in old barriques and is a Cab. Franc on the more serious side, although it has a high drinkability and an obvious charm to it. This wine is full of red berries, an earthy smokiness and a hint of green pepper and dried hay.

Cyrille Sevin

Cyrille Sevin is a former math teacher from Paris, who is now dedicated to the art of wine making in the beautiful area of Cheverny, in the eastern Touraine.
Cyrille has been making organic wine since 2006, and from 2008 he started to use biodynamic practices in the vineyards, but without certification – something that is not important to him.

All work in the vineyards is done by hand and the selection during harvest is very meticulous. The harvest often happens very late, because the right ripeness of the grapes is alfa-omega to Cyrille.
All fermentations occur with indigenous yeasts and take place in cooler cellars, to secure long fermentations. He never adds sulfur, and the wines are of course bottled without fining or filtration.
Cyrille makes super precise, pure and clean wines, with great concentrations. He is a craftsman like few!
